Life has been busy since the Project Wild announcement, June 11th. I’ve been working on my challenges, assembling my team, working full time work, performing at shows and prepping for my upcoming, Diary of a Housewife, album release! I couldn’t be happier with the glorious chaos though sometimes I need to step back from it all and take stock. Brunch happens to be my favourite way to do that.
One of the kids’ favourite brunch meals is crepes. They are delicate rounds of deliciousness and easy to prepare. All it takes is: 7 tablespoons of melted butter (melt in frying pan until butter turns golden and separates), 1 3/4 cups milk, 4 large eggs and 1 1/2 cups flour. Mix the magic and voila? Not quite.
As with all recipes, there are tricks. The key to transforming these four simple ingredients into delicate, buttery deliciousness is melting the butter first and then letting it cool in the fridge while grabbing and mixing the other 3 ingredients. Once you’ve got those in a bowl, grab the melted butter out of the fridge and mix it all with a hand blender or food processor. Be sure to use an 8 inch frying pan too and pre-heating it to medium while you assemble the recipe. To check the pan, drop a teaspoon of water and and check for sizzle. Sizzle means go.
